What's the hardware?
Make a conversion and check the server load level while the ffmpeg is converting.
Also, I hope you removed the old ffmpeg, since having 2 ffmpeg installed always leads to massive errors.
With sends 10MB file, 200MB, 500MB ...
CPU usage is less than 2%

how I can remove ffmpeg?
and to find if there are duplicates on the server

I can't offer you support for server stuff (I'm a php coder, not system expert, you can read what we offer as support in the support information).
Maybe google? Use the ffmpeg forum? Stackoverflow?

okay,
I deleted ffmpeg with an ssh connection and also sftp
since I still have the problem, I reinstalled the server,
with ffmpeg installed a single time

marches videos well for 1 to 2 hours and then blocks again until another day
Is those that is the cache?

I'm not sure, don't sound like an issue I can help you here, got any system expert to ask on this matter?
Something is wrong on the server clearly, but haven't seen such behavior at any other client.

my old server
6 vCPU Processor
  2 × 1TB HDD
  18GB RAM
Centos 6 + WHM/Cpanel

my new server
CPU: 4 vCores
RAM: 8 GB
Disk 750 GB SATA
Centos 7 + Plesk

on both servers I had the same problem, :-\
after more verification, I do not know where the problem may come,
I can do without the connection to the server if you want alexander check

or other platform embed video (youtube / vimeo ...) are not used
is create videos that are sent, they are from 30 seconds to more than 2 hours, the way videos are 30 minutes

when from 10, 20 .. Visitors watch the videos I noticed it blocked all starts, while the server is normal

Try several ffmpeg versions, maybe the new ffmpeg version has a bug or something, not always checkout the latest version, we use this http://www.phpvibe.com/requirements/
There is also a good one written by a client here http://www.phpvibe.com/forum/tutorials/how-to-compile-ffmpeg-on-linux-x86-64-with-centos-6-5-final-cpanel-installed/ (for CentOS).
I think your issue is in the way you install ffmpeg (don't use the same tutorial, you'll get the same result, no matter the server).

okay, I just installed a new server with information on the forum (http://www.phpvibe.com/forum/tutorials/how-to-compile-ffmpeg-on-linux-x86-64-with-centos-6-5-final-cpanel-installed/ )

do you have an idea for error?

http://ffmp.cf/test/ff.php

QuoteError code 127 means the executable (ffmpeg) couldn't be found.
Open this file in an editor and change $ffmpegmd = "ffmpeg"; to your actual ffmpeg command.

This is self explanatory.

I'm not sure what kind of solution you are looking for from me, I'm just a php coder  :-[ ffmpeg issues is not something we solve in here, it's in the terms, info, everywhere.
