Good luck, I've been fighting my host forever now to get the latest installed on my VPS. I tried myself and gave up after a week of beating my head on a wall. Half of the tech support with my provider says it's free, another says they will need to charge, and another says it is impossible. I am still looking for a solution.

Why you guys don't ask for a test account on the hosting?
I've never paid in advance for hosting, if I want to host something I ask for a test account, if it doesn't work I don't want to have headaches with charge-backs and fights.

Ffmpeg's installation depends on the OS of your server 100%.
I don't know to guide you, I'm a coder not a hosting expert, never could do a proper install myself, had to hire help every time.

What I can advice you is this:

Google "How to uninstall ffmpeg on {your server's operating system}"
